1. Start by peeling the kiwis and chopping them into small, uniform pieces.
2. The size of the pieces will determine the texture of your jamβwhether you prefer a chunky or smoother consistency.
The Cooking Process:
3. Place the chopped kiwis in a large, non-reactive saucepan with thick base.
4. Place the saucepan on the stove over medium heat. Cook for 15 minutes until it soft and the water evaporates to leave a thick but soft wet kiwi, keep stirring.
5. Add sugar and cinnamon stick.
6. Bring the mixture to a mild boil, stirring regularly to prevent sticking or burning.
7. Once it boils, reduce the heat to low and let it simmer.
8. Continue simmering on low heat till the jam thickens. It might take about half n hour.

9. To see if the jam is good to go, drop a small bit on a chilled plate and let it cool.
10. Run your finger through it; the jam is done if it wrinkles and holds its shape.
Cooling and Storage:
11. Once the kiwi Jam reaches the desired consistency, remove it from the gas stove.
12. Let the jam cool briefly before adding the lemon juice, mix well.
13. Move it to clean, sterilized glass jar when it cools down sufficiently.
